Traditional Cuban-Style Goat Chilindrón

Goat chilindrón is one of the culinary jewels of the Cuban countryside. Prepared with richly flavored meat, marinated for hours and slowly cooked over low heat, this stew reveals deep flavors that evoke the island’s rural traditions.

🥩 Ingredients:

  • 3 pounds of goat meat (leg and ribs)
  • 2 ripe tomatoes
  • 1/2 teaspoon sweet paprika
  • 1/4 teaspoon black pepper
  • 1 tablespoon salt
  • 5 garlic cloves
  • 2 tablespoons vinegar
  • 1/2 teaspoon oregano
  • 1/2 teaspoon cumin
  • 2 sour oranges
  • 1 large green pepper
  • 1/2 red pepper
  • 1 red onion
  • 1/2 cup extra virgin olive oil
  • 1 cup red wine
  • 2 ounces rum
  • Hot sauce to taste

 

 

👨‍🍳 Step-by-step preparation:

Crush the garlic in a mortar with salt, pepper, cumin, oregano, and paprika until you obtain a smooth paste. Add the sour orange juice, vinegar, and red wine. This will be the base of the marinade.

Cut the meat into large pieces, removing the marrow from the bones to soften its strong flavor. Place it in a container and pour the marinade over it. Add the onion and peppers cut into large pieces. Mix well, cover, and refrigerate overnight.

🔥 Cooking:

The next day, heat the oil in a large pot. Add one teaspoon of sugar and let it caramelize. Brown the pieces of meat on all sides.

Add the chopped tomatoes, then the marinade with all the vegetables. Cook over medium heat until it begins to boil. Pour in the rum and hot sauce to taste. Cook over low heat for one and a half hours, or until the meat is tender.
