Cuban Plantain Fufú with Mojo and Pork Cracklings

Would you like to try one of the most flavorful and traditional mashed dishes in Cuban cuisine? Fufú combines the softness of mashed plantains with the deep flavor of Creole mojo and the crispy touch of pork cracklings. A classic of rural Cuban cooking that continues to win over palates.

🍌 Ingredients:

  • 2 green plantains
  • 1 ripe (yellowish) plantain
  • ½ small onion
  • ½ lemon
  • ½ teaspoon of salt
  • ½ sour orange (juice)
  • Dried or powdered parsley to taste
  • 2 garlic cloves
  • 4 tablespoons of pork lard (rendered from ¾ lb of pork belly)
  • 1 cup of chicken broth
  • 4 tablespoons of pork cracklings
  • Vegetable oil (enough for frying)

 

 

👨‍🍳 Step-by-Step Preparation

1. Render the lard and make the cracklings

Cut the pork belly into pieces, add salt, and fry it with a drizzle of oil until all the fat is released. Set aside the crispy bits (cracklings) on a plate with paper towels and save the rendered liquid fat.

2. Boil the plantains

Peel and cut the green plantains. Let them sit in water with half a lemon to prevent oxidation. Boil salted water and add the green plantains. After 5 minutes, add the ripe plantain. Cook until tender.

3. Prepare the Creole mojo

In a skillet, heat the pork lard. Sauté the chopped garlic cloves, then add the onion. Cook until it becomes translucent. Add the sour orange juice, mix well, and remove from the heat.

4. Mash the plantains

Drain the cooked plantains and begin mashing them in a large bowl. Gradually add the chicken broth while mixing until you achieve a smooth, creamy consistency.

5. Combine the flavors

Add part of the mojo to the mash and continue mixing until fully combined. Then, crush some of the cracklings and mix them into the fufú. Adjust the texture with more broth if needed. Serve hot to enjoy it at its best.

6. Serve with the final touch

When serving, drizzle more mojo on top and add some whole cracklings. You can sprinkle a bit of dried parsley to add color.
