Crush the garlic with 1/4 teaspoon of salt in a mortar. In a pan, add the oil or lard, stir in the garlic, and sauté over low heat until it begins to brown. Then add the chopped onion and cook until well softened.

3. Add the citrus juice

Once the onion is well cooked down, add the sour orange juice, stir, and remove from heat. This unique mojo will be the heart of the dish.

4. Serve with flair

Drain the yuca and place it on a serving dish. Pour the hot mojo over the top, making sure each piece is well coated. Garnish with fresh parsley or sprinkle with the dried version. If you used pork cracklings (empella) in the lard, you can add the crispy bits on top for an extra special touch.
