1️⃣ Boil the malanga
Start by peeling and washing the malangas well to remove excess starch. Cut them into thick slices. Heat water with a pinch of salt in a large pot and add the malanga. Cook for 30 minutes or until tender but not falling apart.
2️⃣ Prepare the Cuban mojo
While the malanga is cooking, slice the onion into thin half-moons. Peel and chop the garlic into small pieces. Heat the lard (or olive oil) in a skillet over medium-high heat. Add the onion and let it sauté until translucent. Add the chopped garlic and a pinch of salt. Sauté for a few minutes, stirring to prevent burning.

Add the sour orange juice to the sautéed mixture, mix well, and let it cook for a couple more minutes. Remove from the heat so it keeps its intense aroma.
