Cuban-Style Fried Chicken: Traditional Flavor with a Homestyle Touch

This recipe is a true gem of Cuban Creole cuisine. With just a few ingredients and a simple process, you get juicy, well-seasoned chicken with that unmistakable aroma of home. Perfect for family meals and gatherings with friends.

🍗 Required ingredients:

  • 1 whole chicken, about 5 pounds
  • 6 garlic cloves
  • 1 small onion
  • 1/2 teaspoon ground cumin
  • 1 1/2 teaspoons dried oregano
  • 1 1/2 teaspoons salt
  • 1/4 teaspoon black pepper
  • 1 sour orange (its juice)
  • 1/2 cup extra virgin olive oil

 

 

🔪 Step 1: Season with intention

Cut the chicken into eight pieces and place it in a large bowl. In a mortar, crush the garlic with a pinch of salt, then add the oregano, cumin, and the remaining salt. Add the sour orange juice and mix well. Rub this mixture over the chicken pieces, making sure they are completely coated. Cover and let rest in the refrigerator for 2 hours.

🔥 Step 2: Cook with patience

After the marinating time, remove the chicken from the refrigerator and let it come to room temperature. Sprinkle the black pepper over the pieces. Heat half of the oil in a wide pot and begin browning the chicken on all sides. Reserve the remaining marinade liquid.

🧅 Step 3: Finish with plenty of flavor

Once the chicken is browned, add the rest of the oil and pour in the reserved marinade. Slice the onion into thick half-moons and place it over the chicken. Cover the pot and cook over medium heat for about 30 minutes. Then uncover, slightly increase the heat, and cook for about 5 more minutes so the chicken finishes golden and the sauce reduces into a fragrant glaze.

This dish should be served hot, straight from the stove.
