Cuban-Style Fried Pork Chunks

These fried pork chunks are one of the true gems of traditional Cuban cuisine. Seasoned with a flavorful marinade and slowly cooked until perfectly golden, they’re ideal for family gatherings or special weekend meals.

🥩 Main Ingredients:

  • 4 pounds of pork chunks with some fat
  • 1 ½ cups of pork lard for frying

🧄 For the Marinade:

  • 1 tablespoon of salt
  • 1 teaspoon of dried oregano
  • ¼ teaspoon of ground cumin
  • ¼ teaspoon of black pepper
  • 7 large garlic cloves
  • ½ cup of sour orange juice

 

 

👨‍🍳 Step-by-Step Preparation:

Start by crushing the garlic in a mortar with a little salt to form a paste. Add the cumin, oregano, and pepper, then pour in the sour orange juice and mix well.

Pour this mixture over the chopped meat and stir until it’s completely coated. Cover with plastic wrap and refrigerate for at least one hour to marinate.

Once marinated, heat the lard in a large pot. When it’s warm, add the meat along with the remaining marinade. Cook slowly over low to medium heat so it softens in its own juices. Do not cover the pot during cooking.

After about an hour, when the meat is tender, raise the heat to brown the outside. Remove with a slotted spoon once golden to your liking and drain on paper towels.
