Traditional Cuban Stewed Rabbit: Creole Flavor That Wins Over Palates

🥘 Ingredients:

  • 1 large whole rabbit, cut into pieces
  • 3 tablespoons olive oil
  • 1 large onion (chopped)
  • 1 large green bell pepper (chopped)
  • 1 large red bell pepper (chopped)
  • 4 garlic cloves (crushed)
  • 1 cup dry red wine
  • 2 cups chicken broth
  • 1 tablespoon tomato purée
  • ½ teaspoon sweet paprika
  • 1 teaspoon dried oregano
  • 1 teaspoon ground cumin
  • 2 bay leaves
  • Salt and pepper to taste
  • 6 green olives
  • 1 tablespoon fresh chopped parsley

 

 

👨‍🍳 Step-by-step preparation:

Start by heating the oil in a large pot. Brown the rabbit pieces well until they are sealed on all sides. Once browned, remove them and set aside.

In the same pot, add the onion, the peppers, and the garlic. Sauté everything until softened and fragrant. Add the spices: cumin, oregano, bay leaves, salt, pepper, and sweet paprika. Stir to combine the flavors.

Add the tomato purée, mix well, and cook for a few more minutes. Return the rabbit pieces to the pot and stir so they are coated with the sofrito.

Pour in the red wine and let the alcohol evaporate over high heat. Then add the broth, the olives, and the parsley. Bring to a boil, cover, and cook over low heat for 45 minutes to 1 hour, until the meat is very tender.
