Oven-Roasted Snapper: Cuban Coastal Flavor

Oven-roasted snapper is a gem of Cuban coastal cuisine. Its white, juicy flesh and mild flavor are enhanced when paired with golden potatoes and sautéed onion. Perfect for treating your guests to a dish that smells of the sea and tradition.

🐟 Essential ingredients:

  • 1 whole snapper (between 6 and 8 pounds)
  • 4 garlic cloves
  • 2 teaspoons salt
  • 1 teaspoon ground black pepper
  • 2 lemons (juice)
  • 2 large onions
  • 4 tablespoons olive oil
  • 2 pounds potatoes
  • Butter (as needed)

 

 

🧄 Marinade to enhance the flavor:

Crush the garlic with salt in a mortar until you obtain a paste. Add the pepper, olive oil, and lemon juice. Stir well until you achieve a uniform, aromatic marinade.

🧴 How to marinate the fish:

Clean the snapper inside and out, removing scales and entrails. Make several shallow cuts on both sides of the flesh. Generously spread the marinade over the entire surface, making sure it penetrates well into the slits. Cover with plastic wrap and refrigerate overnight.

🥔 Assembly and baking:

The next day, peel the potatoes and cut them into thick slices. Slice the onions into thin rings. Grease a baking dish with butter and arrange the potatoes as a base. Place the snapper on top and cover it with the onion rings. Cover everything with aluminum foil.

🔥 Precise and flavorful cooking:

Preheat the oven to 350 °F (175 °C). Place the tray in the oven and bake for 30 minutes. Then remove the aluminum foil and check the internal temperature of the fish: it should be around 145 °F (63 °C). Return to the oven uncovered for 10 more minutes to lightly brown the surface. Serve immediately.
