Cuban Pork Fricassee: A Dish to Remember
This pork fricassee combines the best of Creole seasoning with a touch of spices that enhance the tenderness of the meat. Accompanied by potatoes, carrot, and a fragrant sofrito, it is ideal for family gatherings or to recall those homemade lunches we enjoyed so much.
🐖 Ingredients:
- 3 pounds of pork (loin, leg, or shoulder)
- 4 medium potatoes
- 1/2 lemon
- 1 green bell pepper
- 1/2 red bell pepper
- 2 medium onions
- 1 large carrot
- 2 teaspoons sweet paprika
- 1 teaspoon cumin
- 2 teaspoons oregano
- 2 bay leaves
- 2 teaspoons salt
- 1/2 cup extra virgin olive oil
- 15 olives (optional)
- 1 cup dry wine
- 2 cups tomato sauce
- Black pepper to taste
- 4 cloves garlic
- 1 teaspoon sugar
- Hot pepper to taste (optional)
👨🍳 Step-by-step preparation:
Start by cutting the pork into medium portions and place it in a large bowl. Squeeze the lemon over the meat and add the cumin, oregano, and black pepper. Mix well and set aside.
Finely chop the onion and the peppers. Crush the garlic with a little salt in a mortar.
Place a wide, heavy pot over medium heat. Pour in the olive oil and, when hot, add the onion and peppers. Sauté until they soften slightly and add the crushed garlic.
When everything is nicely browned, add the bay leaves and the remaining salt. Increase the heat and add the pork. Stir to integrate the flavors well. Pour in the dry wine and let the alcohol evaporate.
Add the paprika, tomato sauce, the teaspoon of sugar, the olives, and, if you prefer, a bit of hot pepper. Lower the heat to medium-low, cover, and cook for 30 minutes or until the meat becomes tender.
🥕 Adding potatoes and carrot:
Cut the potatoes into thick slices and the carrot into thin rounds. Add them to the pot and adjust the salt if necessary. Cover again and let cook for 30 more minutes or until the potatoes are soft.
At the end of cooking, remove from the heat and let rest for about 10 minutes to intensify the flavors. Serve hot.
