Cuban-Style Chicken Fricassee
Chicken fricassee is one of those dishes that evoke family memories and traditional home cooking. Its perfect blend of flavors, golden potatoes, and irresistible aroma make it an essential recipe on the Cuban table. Here’s how to prepare it step by step.
🍗 Ingredients:
- 4.5 pounds of chicken pieces
- 1 sour orange (juice)
- 2 teaspoons of salt
- 3 garlic cloves
- 1 teaspoon of sweet paprika
- 2 bay leaves
- 1 teaspoon of sugar
- 8 oz of tomato sauce
- 1/2 cup of capers
- 12 green olives
- 2 tablespoons of raisins
- 1/2 cup of extra virgin olive oil
- 1 cup of white or dry wine
- 1 large onion
- 1 large green bell pepper
- 1/2 red bell pepper
- 1 pound of small potatoes
- Black pepper to taste
- Chicken broth (optional)
👨🍳 How to prepare it:
Season the chicken with pepper and set aside. For the marinade, crush the garlic with a little salt, add the sour orange juice, and mix well. Pour this marinade over the chicken and let it rest in the refrigerator for one hour.
Peel the potatoes and place them in water. Cut the onion and peppers into small pieces.
In a pot, heat a little oil and brown the chicken pieces and potatoes. Then remove them and, in the same pan, add the rest of the oil and sauté the onion and peppers with the bay leaves.
Add the paprika, a pinch of salt, and mix well. Then add the tomato sauce and one teaspoon of sugar. Cook for a few minutes before adding the wine, olives, capers, and raisins.
Return the chicken to the pot along with the marinade juices. Cover and cook over medium-high heat for 5 minutes. Reduce the heat and cook for another 15 minutes.
🥔 Add the potatoes:
Add the whole potatoes if they are small, or cut them if they are large. If you need more liquid, add a little chicken broth. Adjust the salt and simmer for 35 to 40 minutes, until the potatoes are tender but still whole.
