Cuban Country-Style Corn Stew
A delicious dish, full of countryside flavor and Cuban soul
🌽 Main Ingredients:
- 4 medium potatoes
- 4 ears of tender corn
- ½ pound of pumpkin or squash
- 1 pound of pork (preferably belly)
- 1 chorizo sausage
- ½ lemon
- 2 pounds of fresh corn kernels
- 1 whole white onion
- 6 garlic cloves
- 2 tablespoons of dry white wine
- 1 teaspoon of oregano
- ½ teaspoon of cumin
- ½ can of tomato sauce
- 1 teaspoon of salt
- 1 bay leaf
- ½ green bell pepper
- ½ red bell pepper
- ¾ gallon of chicken broth (or water)
- Ground black pepper to taste
- 2 tablespoons of extra virgin olive oil
🥩 Preparing the Pork:
Cut the meat into small pieces and season with salt and pepper. Sauté over medium-high heat in the oil until it releases its fat but without browning completely. Remove and set aside both the meat and the rendered fat.
🧅 Making the Sofrito:
Finely chop the garlic, onion, and peppers. In a large pot, add the pork fat and first sauté the onion and peppers, then the garlic. Add the bay leaf, cumin, oregano, and after a few minutes, the tomato sauce. Stir well.
🌽 Adding the Corn:
Add the corn kernels, reserving one cup. Also add the corn cobs cut into rounds. Sauté briefly and then return the pork to the pot. Add the sliced chorizo and mix everything well.
🍲 Adding the Broth:
Blend the reserved corn kernels with a little broth and pour this mixture into the stew along with the remaining liquid. Cook covered over low heat so the flavors blend and the corn thickens the broth.
🥔 Adding the Root Vegetables:
Peel and cut the potatoes and pumpkin. When the broth has thickened, add them. Stir in the dry wine and lemon juice. Cook slowly until the vegetables are tender.
