Cuban-Style Skillet Roasted Chicken
Skillet roasted chicken is a beloved preparation in traditional Cuban home cooking. The meat is slowly browned and then cooked in its own juices with spices, wine, and potatoes, creating a fragrant sauce that infuses every bite with rich flavor.
🍗 Ingredients for the marinade:
- 1 medium whole chicken, cleaned
- 6 garlic cloves
- ½ cup sour orange juice
- 1 teaspoon salt
- Ground black pepper to taste
🥘 Ingredients for cooking:
- ½ cup dry cooking wine or white wine
- 3 tablespoons extra virgin olive oil
- 1 white onion, finely chopped
- 1 bay leaf
- 3 medium potatoes, peeled and cut into thick slices
- A little water
🥔 Initial preparation of the chicken:
Place the garlic in a mortar with a pinch of salt and crush it until it forms a paste. Add the remaining salt and the sour orange juice, mixing well to create the marinade.
Put the chicken in a large container and make small incisions in the inner side of the meat without piercing the skin. Rub the marinade all over the chicken so the flavors penetrate well. Sprinkle black pepper over the entire surface, cover the container, and refrigerate for 12 hours.
🔥 Browning the chicken:
Remove the chicken from the refrigerator and drain it well. Remove any garlic pieces stuck to the surface to prevent them from burning during browning.
Heat the olive oil in a large, deep skillet or pot over medium-high heat. Place the chicken in the bottom and allow it to brown without moving it for a few minutes until the skin develops a golden color. Then turn it over and repeat the process on the other side.
At the same time, add the potato slices so they can lightly brown as well.
🍲 Slow cooking in the skillet:
Once the chicken and potatoes have developed a nice color, add the dry wine, the bay leaf, and the chopped onion. Wait a few moments for the alcohol in the wine to evaporate.
Combine the remaining marinade with a little water and pour it over the chicken. Reduce the heat, cover the skillet, and cook for 25 minutes.
After that time, uncover the skillet, turn the chicken, and spoon some of the cooking juices over it. Cover again and cook for another 25 minutes until the meat is fully cooked and the potatoes are tender.
To check doneness, pierce the chicken with a thin knife; if no blood appears, it is ready.
🍽️ Serving the dish:
Arrange the potato slices first on a large serving platter and carefully place the chicken on top. Before serving, spoon some of the sauce from the skillet over the chicken to enhance its flavor.
