Yellow Rice with Pork: Creole Flavor and Tradition in Every Bite

- 4 piquillo peppers (or red bell peppers)
- 1 tablespoon salt
- ¼ teaspoon black pepper
- ½ cup tomato purée
- 1 cup dry wine
- 2 cups water
- 2½ cups long-grain rice
- 1 seasoning packet
- 1 bijol packet (or saffron)
👨🍳 How to Prepare This Dish
1. Cut and season the pork
Cut the pork into small cubes and sprinkle with salt and pepper to enhance the flavor.
2. Brown the pork
In a pot, heat half of the lard over high heat and add the pork to sear it well. Reduce to medium-high and allow it to sauté evenly.
3. Prepare the sofrito
Finely chop the onion, bell pepper, and garlic. Make some space in the pot and add the onion and bell pepper first. Let them soften, then add the garlic, stirring until everything releases its natural juices.
4. Add spices and sauce
Add the salt, seasoning packet, and bijol. Mix well, incorporate the tomato purée, and let it sauté. Add the bay leaves, remaining pepper, and some of the piquillo peppers. Increase the heat and pour in the dry wine, letting the alcohol evaporate.
5. Add liquids and rice
Once the wine has evaporated, add the water (with the wine, total liquid = 3 cups). Cover the pot and bring to a boil. Rinse the rice thoroughly to remove excess starch, then add it to the bubbling liquid. Stir and adjust salt.
6. Cook and serve
When it begins to dry, reduce the heat to low, cover, and cook for 10–15 minutes. Uncover, gently fluff the rice with a fork to separate the grains, cover again, and cook for 10 more minutes. Finish by garnishing with the petit pois and remaining peppers. Serve hot and enjoy the exquisite homemade flavor.
