Beef Roast in Casserole: A Cuban Culinary Gem

🥩 Main Ingredients:

  • 5 pounds of beef eye round (boliche)
  • 1 large red onion
  • 6 garlic cloves
  • Juice of 2 sour oranges
  • ½ cup of dry white wine

  • ½ teaspoon of oregano
  • 1 teaspoon of dried sage
  • Salt and black pepper to taste
  • 4 tablespoons of pork lard

 

 

👨‍🍳 Prepare the Marinade:

Crush the onion together with the garlic cloves in a food processor or mortar. Place the paste in a large bowl and add cumin, oregano, sage, sour orange juice, and dry wine. Mix everything well until the flavors are fully combined.

🍖 Marinate the Meat:

Pierce the beef all over with the tip of a knife so it can absorb the marinade well. Sprinkle salt and pepper to taste, and coat the meat thoroughly with the prepared mixture. Cover with plastic wrap and refrigerate for at least 24 hours for a deep, flavorful marination.

🔥 Sear and Cook in Casserole:

Heat the pork lard in a sturdy casserole over high heat. When hot, add the meat and brown it on all sides to seal in the juices. Pour the remaining marinade over the meat, reduce heat to medium-low, cover, and cook for about 2 hours, turning occasionally for even cooking.

🥣 Finishing and Resting:

Once done, check that the meat is tender. Increase heat to medium-high to reduce and slightly thicken the sauce. Remove the meat from heat and let it rest for 20 minutes before cutting it into thick slices.
