Breaded Pork Escalopes: Authentic Cuban Flavor

These escalopes are a classic delight of Cuban home cooking. Juicy on the inside and crispy on the outside, they’re seasoned with garlic, lemon, and spices that give them a unique flavor. Here’s how to prepare them step by step so your next meal is a success.

🥩 Ingredients Needed:

  • 2.5 pounds of pork (6 thin steaks)
  • 2 lemons (fresh juice)
  • 1/8 tsp black pepper
  • ½ tsp dried oregano
  • Salt to taste
  • 6 garlic cloves
  • 3 large eggs
  • 1 tbsp chopped fresh parsley
  • Bread crumbs
  • Vegetable oil for frying

 

🔪 Step 1: Prepare and Marinate

Clean each steak well, removing any excess fat or skin. Use a meat mallet to gently flatten them until thin.

In a mortar, mash the garlic with salt until you form a paste. Add black pepper and oregano, mix, and then add the lemon juice. Coat each steak with this marinade, place them in a dish, and cover with plastic wrap. Refrigerate for at least 2 hours.

After the resting time, remove the meat from the refrigerator so it reaches room temperature. Beat the eggs with a pinch of salt and the finely chopped parsley. Place bread crumbs in a separate plate.

Dip each steak first into the beaten egg, let excess drip off, and then coat thoroughly with bread crumbs, pressing so they adhere well.

Heat plenty of oil in a large skillet over medium-high heat (around 340°F / 170°C). Fry one or two escalopes at a time until golden and crispy on both sides. Remove and place them on paper towels to absorb excess oil.
