Cuban-Style Casserole Tamale: Tradition in Every Spoonful

A dish that evokes the memory of the countryside and family kitchens. The casserole tamale is one of those recipes that warms the soul: tender grated corn, seasoned pork, and a sofrito that brings all the flavor of Creole cooking. 🌽 Ingredients:

  • 3 pounds of tender grated corn
  • 2 pounds of pork (preferably belly)
  • ½ green bell pepper
  • ½ large white onion
  • 4 garlic cloves
  • ¼ teaspoon of cumin
  • ½ small can of tomato puree
  • 1 ounce of dry wine
  • 4 cups of water
  • 2 tablespoons of extra virgin olive oil
  • Ground black pepper to taste
  • 1½ tablespoons of salt

 

 

👨‍🍳 Steps to Prepare

1. Prepare the ingredients

Chop the bell pepper and onion into small pieces; crush the garlic in a mortar with a pinch of salt. Grate the tender corn cobs using a grater and set aside in a deep bowl.

2. Cook the pork

Cut the pork belly into small cubes and sauté over medium heat in a casserole with olive oil. Add salt and pepper, stirring to prevent sticking or drying out.

3. Make the sofrito

When the pork is halfway cooked, add the bell pepper and onion. Cook until they soften. Add the crushed garlic and sauté until everything is nicely golden.

4. Incorporate the flavors

Pour in the dry wine and let the alcohol evaporate. Add the tomato puree and cumin, stirring to blend all the flavors together.

5. Add the corn

Add the grated corn to the sofrito and mix well. Gradually pour in the water while stirring continuously to prevent lumps. This step is key to achieving the desired texture.

6. Cook over medium heat

Keep the preparation at medium heat, stirring constantly for about 30 minutes until the tamale thickens and reaches a creamy consistency. Turn off the heat and let it rest for a few minutes.
