🔪 1. Prepare the vegetables and tails
Cut the peppers into thin strips, the onion into small cubes, and mash the garlic with salt and some of the parsley. Chop the lobster tails into medallions and season with salt and pepper.

In a large pot, add a bit of the oil and sauté the lobster until it turns reddish. Remove and set aside.

In the same pot, pour in the rest of the oil and add the peppers, then the onion, bay leaves, and mashed garlic. Cook over medium heat until tender.

Stir in the tomato sauce, ketchup, sweet paprika, Worcestershire sauce, sugar, and pimientos. Mix and let the flavors blend together.

Pour in the white wine and raise the heat so the alcohol evaporates. Then add the reserved lobster and stir carefully.
