Green Plantain Soup: Tradition and Flavor from the Cradle

A homemade recipe enjoyed by generations of Cubans, with simple ingredients yet a flavor that soothes the soul.

🍖 Ingredients for the base broth:

  • 1 pound beef shank (cut into small pieces)
  • 1 whole onion
  • 1 green bell pepper
  • 3 fresh peeled tomatoes
  • 5 cloves of garlic
  • 1 small bunch of parsley or cilantro
  • 1 tablespoon salt 
  • Black pepper to taste
  • 8 cups of water

 

 

🍌 Ingredients for the soup:

  • 2 green plantains
  • Vegetable oil (for frying)
  • Juice of 1 lemon
  • 3½ cups ground chicharritas
  • 7 cups strained broth

🔥 Preparing the broth:

In a pressure cooker, add the water, parsley, and the vegetables cut into large pieces. Add the meat, half a tablespoon of salt, and a touch of black pepper. Cover and cook for 25 minutes until a deeply flavored broth is obtained and the meat is very tender.

🍳 Making the chicharritas:

Peel and slice the plantains into very thin rounds using a chicharrita slicer. Fry them in hot oil until golden and crispy. Place on absorbent paper. Once cool, grind them in a blender until a fine powder is obtained. Measure 3½ cups of this powder to use in the soup.

🥣 Finishing the soup:

Strain the broth and measure 7 cups. Transfer them to a large pot and add the ground green plantain chicharritas and the lemon juice. Cook over medium heat, stirring constantly to prevent lumps. Taste and adjust the salt. If desired, add small pieces of the cooked meat.
