Cuban Barbecue Chicken: An Exquisite Creole Delicacy
Barbecue chicken is a much-loved preparation on the Cuban table thanks to its combination of bold flavors and tender texture. Slowly cooked and coated in a concentrated sauce, prepared with a somewhat Asian-inspired style, this dish is ideal for sharing with family and enjoying with friends at social gatherings.
🍗 Main ingredients:
- 4 chicken drumsticks and 4 chicken thighs
- ½ red bell pepper cut into long strips
- 1 medium onion cut into long pieces
- 4 garlic cloves, finely chopped
- Ground black pepper to taste
- 4 ounces unsalted butter
- 1 teaspoon sweet paprika
- ½ cup dry white wine
- 1 cup soy sauce
- Vegetable oil for browning
- 2 medium potatoes (optional)
👨🍳 Step-by-step preparation:
Heat a wide, heavy-bottomed casserole over medium-high heat. Add the butter along with a small drizzle of oil and let it melt completely.
Season the chicken pieces with black pepper. Place them in the hot casserole and brown them slowly, turning them to achieve an even sear. Once well browned, remove them and set aside.
Using the same fat, add the onion and bell pepper. Stir until softened and fragrant. Add the garlic and cook briefly, making sure it does not burn.
Return the chicken to the casserole, sprinkle with paprika, and pour in the soy sauce along with the dry white wine, distributing the liquid evenly over each piece.
Let it boil for a few minutes so the alcohol from the wine evaporates. Cover, lower the heat, and cook slowly for about 30 minutes.
🥔 Adding the potatoes:
Peel and wash the potatoes. Cut them into medium-sized pieces and place them interspersed among the chicken pieces. Cover again and continue cooking so they soften with the steam and sauce.
Uncover, check for doneness, and gently move the casserole so everything is well coated with the sauce. Cook uncovered for about 10 more minutes, until the sauce thickens and develops its characteristic deep shine.
