Cuban White Bean Stew: A Creole Gift for the Palate
A stew full of aromas, color, and Cuban table tradition that will surprise everyone with its exquisiteness.
🫘 Ingredients:
- 1 lb dried white beans (soaked overnight)
- Enough water
- 1 large whole onion
- 2 garlic cloves
- ½ tsp ground cumin
- ¼ tsp saffron
- 2 plum tomatoes
- 2 medium bay leaves
- 2 medium potatoes
- ½ lb pumpkin
- 2 tbsp extra virgin olive oil
- 8 cachucha peppers (or ½ green bell pepper)
- 1 piece of bacon
- 3 chorizos
- 3 blood sausages
- 3 pieces of smoked pork bones
- Salt to taste
🌙 Pre-soaking:
Leave the white beans covered with plenty of water overnight. This step is essential for even and faster cooking.
👨🍳 Initial cooking:
The next day, place the white beans in a pot with water, let them boil for a few minutes, and discard that first water. Then cook them in the pressure cooker with plenty of water, smoked pork bones, tomatoes, and bay leaves until tender (approx. 30–35 minutes).
🍃 Preparing the sofrito:
Chop the onion and peppers. Crush or slice the garlic. In a pan, heat the oil and fry the bacon until it releases its fat. Add the onion, peppers, and finally the garlic. Stir in the cumin, saffron, and mix well. Add the chorizo and blood sausage pieces, sauté for a few minutes, then remove and set aside.
🥩 Vegetables and meats:
Cut the potatoes and pumpkin into medium cubes. Once the white beans are ready, remove the tomatoes and blend them with the sofrito and a little broth. Take out the pork bones, debone them, and reserve the meat. Return the white beans to the pot with the blended sofrito and add the root vegetables.
🥣 Final cooking:
Adjust salt and let simmer until the potatoes and pumpkin are tender. Add the pork meat, chorizos, and blood sausages back. Cook for 5 more minutes, turn off the heat, and let rest for 10 minutes before serving.
