Cuban Stuffed Potatoes: An Unforgettable Creole Flavor

These stuffed potatoes are a tender and flavorful bite that combines the best of homemade mashed potatoes with the delicious taste of Creole ground beef. Perfect for a different lunch, a snack with history, or a family gathering.

🥔 Ingredients:

For the potato dough and filling:

  • 3 pounds of potatoes
  • 1 teaspoon of salt for boiling
  • 2 pounds of ground beef
  • 1 chorizo (or a piece of ham)
  • 1 onion
  • 1 green bell pepper
  • 2 garlic cloves
  • 1 bay leaf
  • ¼ cup of dry wine
  • ½ cup of tomato sauce
  • 1 teaspoon of sugar
  • 1 teaspoon of salt
  • 1/8 teaspoon of black pepper
  • ¼ cup of extra virgin olive oil

For breading and frying:

  • 3 eggs
  • ½ teaspoon of salt
  • ½ teaspoon of garlic salt
  • 2 cups of wheat flour
  • 3 cups of breadcrumbs
  • Vegetable oil for frying

 

 

👨‍🍳 Steps to Prepare Stuffed Potatoes

1. Boil the potatoes

Wash them well with the skin on and place them in a large pot with enough water and salt. Cook over high heat until boiling, then lower the heat and cook slowly until soft.

2. Prepare the picadillo

Meanwhile, finely chop the onion, bell pepper, and mash the garlic. Sauté them in hot oil along with the bay leaf and a pinch of salt. Add the ground beef and break it up well.

3. Season the filling

Add the chopped chorizo, the dry wine, and let the alcohol evaporate. Then add tomato sauce, sugar, and pepper. Cook everything over medium heat until the picadillo is almost dry. Set aside.

4. Make the mashed potatoes

Once cooked, peel the potatoes and mash them finely while still hot. Adjust the salt and let cool slightly.

5. Form the potato balls

Take a portion of mashed potatoes and shape it into a ball. Make a hole in the center, place a teaspoon of picadillo inside, and seal with more mashed potatoes. Press firmly with your hands so they stay compact.

6. Bread the potatoes

Coat each ball in flour with garlic salt, then dip in beaten egg with a pinch of salt, and finally cover with breadcrumbs. Press lightly so the breading adheres well.

7. Fry and serve

Heat enough oil and fry the potatoes until golden brown on all sides. Remove and place on paper towels. Enjoy them hot!
