Chancellor Fish Fillet: A Crispy Delight with Cheese and Ham
An elegant, different, and very tasty preparation. This recipe combines the tenderness of white fish with a creamy cheese filling and the savory touch of ham. An ideal dish for special occasions or whenever you want to surprise with something different.
🐟 Ingredients needed:
- 2 lbs of white flesh fillets (grouper or another firm fish)
- 5 large eggs
- ½ lb of ham, sliced
- ½ lb of yellow cheese, sliced
- ⅓ cup of wheat flour
- ½ cup of breadcrumbs
- Juice of 2 lemons
- Salt to taste
- Ground black pepper
- Enough vegetable oil for frying
🔪 Step 1: Prepare the fish
Carefully wash and dry each fillet. Cut them lengthwise into two thin layers. Place them on a clean cloth and press lightly to flatten.
Season with salt, pepper, and lemon juice on both sides. Place the fillets in the refrigerator and let them rest for 30 minutes so they absorb the flavor.
🧀 Step 2: Stuff and bread
Remove the fillets from the cold and let them come to room temperature. Join two halves of fish, placing a slice of ham and a slice of cheese between them.
Coat them in flour, then dip them in beaten eggs, and finally cover them completely with breadcrumbs. Shape with your hands so they don’t open during cooking. You can mark them with the back of a knife for a professional finish.

In a deep skillet, heat oil to 380°F (about 190°C). Carefully fry each stuffed fillet, turning them so they brown evenly. Do not overcrowd the skillet.
Once ready, place them on absorbent paper to remove excess oil. Let them rest a few minutes before serving.
