Cuban Style Chicken Milanese: A Treat for the Palate

A homemade option that always wins hearts. These milanesas are marinated with garlic, salt, pepper, and lemon, carefully breaded, and fried at the right temperature for a flawless finish. Here’s how to achieve the perfect coating and unbeatable texture in every bite.

🍗 Ingredients:

  • 3 chicken breasts
  • 2 lemons (juice)
  • 4 eggs
  • Ground black pepper, to taste
  • Salt, to taste
  • 6 garlic cloves
  • All-purpose flour
  • Breadcrumbs
  • Dried parsley powder
  • Vegetable oil, enough for frying

🔪 Step 1: Cutting and aromatic marinade

Slice each breast into thin fillets (2 per breast). Gently pound them with a mallet to thin and widen the surface. Keep chilled.

In a mortar, crush the garlic with a pinch of salt until it forms a paste. Add the juice of the two lemons and mix. Season the fillets with salt and pepper, coat both sides with the garlic-lemon marinade, massage it in, cover with plastic wrap, and refrigerate for 1 hour.

🥚 Step 2: Three-step breading

Mix the parsley with the flour. In another bowl, beat the eggs with a pinch of salt.

Dredge each fillet in flour (shake off the excess), then dip in the beaten eggs, and finally coat with breadcrumbs, pressing gently to set the coating. Place the breaded pieces on a large tray.

🔥 Step 3: Controlled frying

Heat plenty of oil in a heavy skillet to 350 °F (175 °C). Fry one piece at a time to maintain the temperature. Cook until the coating is golden and the inside is fully cooked. Transfer to paper towels to remove excess oil.

📌 Step 4: Keys to a perfect finish

  • Resting in the marinade enhances flavor and improves texture.
  • The flour creates a base layer that helps the breadcrumbs stick.
  • Do not overcrowd the skillet: this prevents the oil temperature from dropping.
