Cuban Rabo Encendido: Flavor That Brightens the Table

Cuban Rabo Encendido is one of those stews that begins to win you over from the moment it starts cooking. Slow cooking transforms the oxtail into exceptionally tender meat, while the sofrito, tomato, and combination of wines create a rich and flavorful sauce. The touch of heat gives it the unmistakable character that lives up to its name.

🥩 Ingredients:

  • 10 ½ pounds oxtail
  • 3 medium onions, finely chopped
  • 7 garlic cloves, crushed in a mortar
  • 2 green bell peppers, finely chopped
  • 1 red bell pepper, finely chopped
  • ½ teaspoon ground black pepper
  • 1 ½ tablespoons salt
  • ¼ teaspoon dried oregano
  • ¼ teaspoon ground cumin
  • ½ cup fresh parsley, finely chopped
  • ½ cup extra virgin olive oil
  • 1 small can tomato sauce (8 ounces)
  • 1 cup white wine or dry cooking wine
  • 2 cups red wine
  • Hot sauce to taste

 

 

👨‍🍳 Step-by-Step Preparation:

Begin by separating the oxtail into pieces. To make cutting easier, locate the joints between the bones and cut through them until you have portions of a suitable size for the stew.

Pour the olive oil into a large pot and heat it over medium-high heat. Add the oxtail pieces and carefully brown them on all sides. This initial searing will help develop a deeper flavor during cooking. Once they have developed a good color, remove them from the pot and set aside.

🧅 Prepare the Sofrito:

Using the same oil, add the previously chopped onions and peppers. Add a small amount of salt, stir, and cook until the vegetables begin to soften.

Add the crushed garlic and continue cooking while stirring to prevent it from burning. Once the sofrito is fragrant and the vegetables have lost some of their firmness, add the black pepper, cumin, oregano, and parsley. Stir again to distribute the spices evenly.

🍷 Add the Wines and Sauce:

Pour the white wine and red wine over the sofrito. Continue cooking for a few minutes to allow the alcohol to evaporate and the flavors to begin concentrating.

Then add the remaining salt, tomato sauce, and as much hot sauce as you prefer. Return the oxtail pieces to the pot and arrange them in the sauce. The liquid should reach almost all the pieces; if there is not enough, add a little more wine.

🔥 Slow-Cook the Oxtail:

Cover the pot, reduce the heat to medium, and cook for 1 hour without stirring unnecessarily.

After that time, check the texture of the meat and make sure there is still enough liquid in the pot. If the sauce has reduced too much, add a little more wine. Cover again and continue cooking for 1 additional hour.

When the meat is tender and pulls away easily around the bone, remove the lid. Keep the pot over the heat for approximately 15 minutes, allowing the sauce to reduce and develop a thicker consistency.

Once the desired consistency has been reached, serve the Rabo Encendido piping hot with plenty of sauce.
