Cuban-Style Chicken Soup: Grandma’s Secret
A homemade delight with the authentic flavor of our island that will delight everyone at home.
🥘 Ingredients for the broth:
- 1 medium whole chicken (cut into eighths, skinless)
- 1 teaspoon salt
- 2 bay leaves
- ½ teaspoon ground cumin
- ½ teaspoon all-purpose seasoning
- 1 packet saffron
- 1 green bell pepper
- 1 whole onion
- 5 garlic cloves, peeled
- ½ lemon
- 1 bunch fresh cilantro
- 1 gallon of water
🥕 Ingredients for the soup:
- 2 ears of corn, cut into rounds
- 2 carrots
- 2 white malangas
- ¾ pound pumpkin
- 2 medium potatoes
- Olives to taste
- Additional salt
- 1 lemon
- Noodles (amount to taste)
🔥 Preparing the base broth:
In a pressure cooker, place the chicken pieces along with the water. Add salt, bay leaves, cumin, all-purpose seasoning, saffron, the pepper cut into large pieces, the whole onion, the whole garlic cloves, the bunch of cilantro, and the juice of half a lemon. Cover and cook for 30 minutes until the chicken is tender and the aromas are well concentrated.
🍲 Making the soup:
Once the broth is ready, remove all the solids and strain the liquid into another pot. Cut the root vegetables and vegetables into small pieces and add them to the broth. Add a pinch of salt, the olives, and the juice of the remaining lemon. Cover the pot and cook over medium heat for half an hour until everything is tender.
🍜 Finishing and serving:
When the root vegetables are soft, add the noodles and the cooked chicken pieces. Adjust the salt if necessary. Cook for a few more minutes until the noodles are done. Serve hot and enjoy a true culinary delight.
