Cod Aporreado: Traditional Cuban Recipe

- 1 pound cod loin (desalted from the day before)
- 1 whole onion
- 1 bell pepper (half ripe/red and half green)
- 2 cloves of garlic
- ½ cup extra virgin olive oil
- 1 small can of roasted red peppers
- 1 bay leaf
- Salt to taste
- 1 small packet of ground saffron
- 3 tablespoons dry cooking wine
- 1 pinch of black pepper
- 3 medium potatoes
- 1 small can of tomato sauce
👨🍳 How to Prepare Aporreado Step by Step
1. Boil and shred the cod
Boil the cod for 2–3 minutes to finish desalting it and soften it. Then drain and carefully shred it, removing the bones.
2. Chop the vegetables
Cut the onion and bell pepper into small strips, and slice the garlic cloves thinly.
3. Prepare the sofrito
In a large pot, heat the olive oil and sauté the onion, bell pepper, and garlic until golden and fragrant. Add the bay leaf, half of the roasted red peppers, and the saffron. Mix well.
4. Add the wine and sauce
Add the tablespoons of dry cooking wine and the can of tomato sauce. Stir to combine all the flavors.
5. Add the cod and potatoes
Peel the potatoes and cut them into medium-sized pieces. Add them to the pot along with the shredded cod and a pinch of black pepper. Adjust the salt if necessary.
6. Simmer
Cover the pot and cook over low heat until the potatoes are tender and well infused with the sofrito flavors.
7. Garnish and serve
Garnish with the remaining roasted red peppers and, if desired, a few sprigs of parsley. Serve hot and accompany with white rice or tostones.
