Cuban-Style Malarrabia

Malarrabia is a very traditional Cuban dessert known for its smooth texture, delightful aroma, and irresistible sweetness. It is made from tender sweet potatoes cooked with citrus and spices, creating a perfect combination to enjoy on any occasion.

🍠 Main Ingredients:

  • 2 pounds of sweet potatoes (approx. 2 medium sweet potatoes)
  • 2½ cups of water
  • 1½ cups of brown sugar (or ½ cup of cane syrup)
  • 3 strips of sweet orange or lemon peel (or 3 tender sour orange leaves)
  • ½ teaspoon of ground cinnamon (or 1 cinnamon stick)
  • 1 pinch of salt

👨‍🍳 Preparation:

Wash, peel, and cut the sweet potatoes into small cubes to make cooking easier. Place the water in a pot over medium-high heat and, once it begins to boil, add the sweet potatoes along with the pinch of salt. Cook for about 15 minutes or until the cubes are slightly tender.

Add the sugar, citrus peels, and cinnamon. Lower the heat to medium-low and let everything cook slowly until the sweet potatoes are completely soft and the syrup maintains a light consistency. Remove from heat and allow the dessert to cool to room temperature before transferring it to a serving dish and placing it in the refrigerator.
