  • 3 pounds of fresh, cleaned squid
  • 2 cups finely chopped white onion
  • 1 cup good-quality red wine
  • ¾ cup extra virgin olive oil
  • ¾ cup fresh tomato, diced
  • ½ cup finely chopped parsley
  • 1 teaspoon vinegar
  • 2 teaspoons salt
  • 4 garlic cloves

👨‍🍳 How to Cook Squid in Its Ink Step by Step

1. Clean and prepare the squid

Carefully separate the head from the body. Remove the transparent quill and the innards. Take the small ink sac, extract the liquid, and reserve it. Discard the rest. Rinse each piece well inside and out.

2. Cut and rinse again

Cut the squid into rings or medium-sized pieces. Rinse again and drain well before setting aside.

3. Crush the garlic

Place the garlic cloves in a mortar with a pinch of salt and crush until you get an aromatic paste.

4. Prepare the base sofrito

Heat most of the olive oil in a large pot. Sauté the onion until translucent, add the garlic, and stir to release all its aroma.

5. Cook the squid

Increase the heat and add the squid. Stir well to seal. Pour in the vinegar, then add the reserved ink immediately.

6. Add the wine and season

Add the red wine and let it boil to evaporate the alcohol. Add the parsley, remaining salt, tomato, and the rest of the oil. Mix well and cover the pot.

7. Final cooking and resting

Cook over medium heat for about 50 minutes or until the squid is tender. Turn off the heat and let it rest for 20 minutes before serving.
