Cuban-Style Stuffed Turkey
This stuffed turkey stands out for its excellent presentation, deep aroma, and unmatched flavor, thanks to its characteristic criollo seasoning. The contrast between the golden, tender meat and the congrí filling creates an exquisite dish full of tradition.
🦃 Ingredients for the seasoning:
- 1 turkey (guanajo) of 8 lb
- 4 garlic cloves
- 1 large onion in slices
- 1/2 teaspoon black pepper
- 1 teaspoon cumin
- 1 teaspoon oregano
- 2 teaspoons salt
- Juice of 2 sour oranges
- Lard or oil
🍚 Ingredients for the filling:
- 2 cups of congrí rice
- Reserved onion slices
🧄 Seasoning preparation:
Crush the garlic with salt in a mortar, then add the sour orange juice, pepper, cumin, and oregano until you obtain a well-integrated seasoning.
🥄 Seasoning the turkey:
Place the turkey in a large container and make small internal incisions. Rub the seasoning over the entire surface and inside. Place the onion slices on top, cover it, and refrigerate for 12 hours.
🍚 Filling preparation:
Cook a slightly dry congrí and let it cool. Mix it with the onion slices and stuff the turkey without compacting it. Close with sturdy thread.
🔥 Oven cooking:
Coat the skin with lard and place it on a rack-lined baking tray. Preheat the oven to 325°F (163°C) and bake for 2½ to 3 hours, brushing occasionally with mojo or lard. If you want the meat to be more tender, place a container with water inside the oven.
The breast should reach 165°F (74°C) and the thighs 185°F (85°C). Once it reaches this temperature, remove it from the oven and let it rest for 10 minutes before carving.
