- 1 green bell pepper
- 1 red bell pepper
- 1 teaspoon paprika
- 1 tablespoon salt
- 1 tablespoon sugar
- ½ cup white wine
- ¾ cup extra virgin olive oil
- 2 cans tomato sauce
- 4 piquillo peppers
- Hot sauce (to taste)
- Ground black pepper
- A few drops of lemon juice
👨🍳 How to Make Cuban Enchilado Shrimp
1. Prepare the ingredients
Peel the shrimp if they are not already cleaned. Cut the onion and peppers into medium pieces, and slice the garlic into thin strips.
2. Make the sofrito
In a large pot, heat the olive oil and first add the onion and peppers. When they are slightly golden, add the garlic and continue sautéing.
3. Add the seasonings
Add the salt, sugar, chopped piquillo peppers, and the teaspoon of paprika. Mix well so all the flavors blend together.
4. Add the sauce and the shrimp
Pour in one can of tomato sauce and raise the temperature. Add the shrimp and stir until they begin to take on their characteristic color. Add a few drops of lemon.
5. Add the wine and the spicy touch
Add the white wine and wait a few minutes until the alcohol evaporates. Then add the second can of tomato sauce, a pinch of black pepper, and hot sauce according to your taste.
6. Finish cooking
Add the finely chopped fresh parsley, adjust the salt if necessary, and cook for 3 to 4 more minutes. Turn off the heat and cover the pot to let it rest before serving.
