Traditional Cuban Cod Croquettes

- 150 g of wheat flour
- 2 eggs

👨🍳 Step-by-Step Instructions for Making Cod Croquettes
1. Cook the cod
Boil the cod in the milk. Once it reaches a boil, turn off the heat and let it sit for 2 minutes. Remove, let it cool, and flake the cod, removing skin and bones.
2. Chop the ingredients
Finely chop the onion, garlic, and parsley.
3. Prepare the sofrito
In a saucepan, heat the olive oil with the butter. Add the onion and garlic and sauté until golden.
4. Add the flour
Add the flour and stir well so it cooks and takes color. Then gradually incorporate the hot milk, stirring constantly to avoid lumps.
5. Incorporate the cod
Add the flaked cod, nutmeg, salt, and pepper to taste. Cook until the mixture detaches from the bottom of the pan.
6. Finish the dough
Add the chopped parsley, stir, and cook a couple more minutes. Then place the mixture in a container, cover with plastic wrap (directly on the surface), and refrigerate for at least 4 hours (preferably overnight).
7. Shape and coat
With the cold mixture, form the croquettes, dip them in beaten egg, and coat with bread crumbs. You can shape them into cylinders or rounds.
8. Fry
Fry in plenty of hot oil until golden. Place on paper towels and serve hot.
