Cuban Split Pea Fritters: A Delight for the Palate

  • 1 teaspoon cumin
  • Salt to taste
  • Ground black pepper to taste
  • Vegetable oil for frying

1. Soak the Split Peas

Place the split peas in a large bowl and cover them with enough water. Let them soak overnight so they become properly hydrated.

2. Cook Until Tender

Discard the soaking water and place the split peas in an electric pressure cooker. Cover them again with water and cook for 25 minutes. Once the cooking time is complete, allow the cooker to release all pressure before opening it. Drain the split peas and reserve a small amount of the cooking liquid.

3. Process the Ingredients

Place the cooked split peas, onion, garlic, and ají cachucha peppers in a blender. Blend until a smooth mixture is obtained. If necessary, add a small splash of the reserved cooking liquid. While continuing to blend, gradually add the egg.

4. Season the Mixture

Pour the mixture into a deep bowl and add the chopped parsley, cumin, salt, and black pepper. Stir well until all ingredients are fully incorporated. Let the mixture rest for 30 minutes so the flavors can blend properly.

5. Fry the Fritters

Heat plenty of oil in a large skillet over medium-high heat. Using a spoon, drop small portions of the mixture into the hot oil, leaving space between them. Fry until they develop a beautiful golden color on both sides.

6. Drain and Serve

Remove the fritters from the oil and place them on paper towels to absorb excess grease. Serve them hot and freshly made to fully enjoy their flavor and texture.
