  • 2 large pieces of pork skin without fat (preferably pork belly skin)
  • 1 tablespoon of salt
  • Enough water for boiling

👨‍🍳 Step-by-Step Preparation

1. Cut and prepare the pork skin

Roll up the pork skin and divide it into sections of about two inches each. Then unroll every piece to form long, easy-to-handle strips.

2. Soften with the initial cooking

Place enough water in a pot and bring it to a boil over medium-high heat. Add the salt and the pork skin strips. Cover and cook for 25 minutes or until they become tender when pierced with a fork.

3. Drain and dry

Remove from the heat and drain all the liquid completely. Arrange each strip flat on a baking tray fitted with a rack to allow better air circulation.

4. Dehydrate slowly

With the oven preheated to 195°F, place the tray inside and let them dry for three and a half hours. This step is essential to ensure they puff up properly when fried later.

5. Let cool and cut

Once the drying process is finished, allow them to cool down completely. You will notice they become firm and brittle. At that point, cut them into the size you prefer.

6. Fry until puffed

Heat plenty of oil or lard in a wide skillet over medium heat. Fry the pieces in small batches and watch them puff up quickly. Shape them gently as they expand and remove them when they reach a light golden color.

7. Drain and enjoy

Place them on paper towels to remove excess grease. Let them rest for a few minutes and serve hot to enjoy their full crunchy texture.
