Sweet Plantain Omelette: A Tradition Turned into Flavor

The sweet plantain omelette is a delicious option within Cuban cuisine that combines the natural sweetness of ripe plantains with the softness of eggs. Its texture is tender on the inside and slightly crisp on the outside, making it perfect to enjoy at any time of the day.

🥄 Ingredients

  • 1 very ripe plantain
  • 3 eggs
  • Salt to taste
  • 2 tablespoons of extra virgin olive oil
  • Enough vegetable oil for frying

 

 

🍌 Preparing the plantain

Remove the peel from the plantain and slice it into moderately thick rounds. Make sure it is very ripe to achieve a richer flavor and a softer texture when cooked.

🔥 Initial browning

Heat enough vegetable oil in a skillet over medium-high heat. Add the slices and cook them until they develop a deep golden color on both sides. Then remove them, drain well, and place them on absorbent paper to eliminate excess oil.

🥣 Mixing everything together

Place the fried slices in a bowl and, using a fork, press them until you obtain a uniform mash. In another bowl, beat the eggs with a pinch of salt and add the mashed plantain. Mix until fully combined.

🍳 Cooking the omelette

Add one tablespoon of olive oil to a wide skillet and spread it evenly. Place over medium heat and, once hot, pour in the mixture. Spread it evenly and let it cook until the edges begin to pull away slightly.

🔄 Flipping and finishing

Using a large plate, carefully flip the omelette. Add another tablespoon of olive oil to the skillet, let it heat again, and cook the other side until evenly browned. Gently press the surface to help compact the mixture.

🍽️ Serve immediately

Once ready, remove the omelette and place it on a large plate. It is best enjoyed hot to fully appreciate its texture and flavor.
