Homemade Cuban Cupcakes: A Delight of Cuban Pastry

Place the butter in a pan over medium heat until it melts completely. Remove from heat and let it cool before using.

Separate the egg whites from the yolks into different bowls. Beat the yolks, gradually adding the sugar until you obtain a thick, creamy, and lighter-colored mixture.

In another bowl, beat the egg whites until stiff peaks form, making sure they are firm and airy.

Sift the flour together with the baking powder and salt to avoid lumps and achieve a finer texture.

Add the melted butter, milk, vanilla, lemon zest, and rum to the yolk mixture. Mix gently until all ingredients are well incorporated.

Fold in the beaten egg whites using gentle, enveloping motions to preserve the air in the mixture. Then gradually add the sifted flour, mixing carefully until you obtain a smooth batter.

Preheat the oven to 350°F (175°C).

Grease individual cupcake or muffin molds. Pour the batter, filling only two-thirds of each mold.

Place on a baking tray and bake for about 20 minutes, or until lightly golden and a toothpick inserted comes out clean.

Remove from the oven and let cool completely at room temperature before serving. If desired, sprinkle powdered sugar on top for a more appealing finish.
