Cuban Papaya Dessert in Syrup: A Traditional Sweet That Feels Like Home
Dulce de fruta bomba is a beloved dessert in traditional Cuban home baking. Made with green papaya slowly cooked in a fragrant syrup, this sweet treat is known for its glossy cubes and gently spiced flavor.
When prepared properly, each piece develops a distinctive texture: slightly firm on the outside and tender on the inside. It is a very popular dessert in Cuban households and is usually served well chilled as the perfect ending to a family meal.
🍈 Ingredients:
- 1 medium green papaya
- White sugar (same amount as the volume of diced papaya)
- 1 cinnamon stick
- 1 teaspoon vanilla extract
- 1 pinch of salt
- A small amount of water
👨🍳 Step-by-step preparation:
Start by peeling the papaya, removing the seeds from the center, and rinsing the flesh thoroughly. Then cut it into medium cubes of about two centimeters so they keep their shape during cooking.
Place the papaya cubes in a pressure cooker and add the sugar, the cinnamon stick, a pinch of salt, and a small amount of water. It is not necessary to add much liquid because the fruit will release its own juices during cooking.
Close the pressure cooker and cook under pressure for about 10 minutes. This step helps soften the fruit and allows it to begin absorbing the syrup.
🔥 Perfect syrup consistency:
After this time, carefully release the pressure. Add the vanilla extract, stir gently, and continue cooking without pressure. At this stage, avoid stirring constantly so the cubes keep their shape and the syrup does not crystallize.
Allow the liquid to reduce gradually until the syrup thickens. When the papaya cubes become slightly translucent and the syrup reaches a thicker consistency, the dessert is ready.
Turn off the heat and transfer the preparation to a large glass or ceramic dish. Let it rest until it reaches room temperature, then refrigerate it for about one hour before serving.
