Cuban Dulce de Leche: With a Taste of Home

Dulce de leche is a classic of traditional Cuban pastry-making. Its grainy texture, deep flavor, and the aroma of cinnamon make it an irresistible dessert that has been passed down from generation to generation. 🥛 Required ingredients:

  • 1 gallon of whole milk
  • 1 large lemon (2 tablespoons of juice)
  • 4 cups of white sugar
  • 2 cinnamon sticks
  • 1 teaspoon vanilla
  • A pinch of salt

 

 

👨‍🍳 Initial preparation:

Place the milk in a wide, deep pot. Add the lemon juice and a few pieces of the peel. Bring the mixture to medium-high heat. When it comes to a boil, the milk will curdle and the first lumps will begin to form, marking the starting point of this dessert.

🔥 Cooking the dulce:

Add the sugar, the pinch of salt, and the cinnamon sticks. Lower the heat to medium-low and allow the mixture to cook slowly for an hour or more. Avoid stirring frequently to preserve the grainy texture. Once the curds take on a caramel color and the liquid has reduced, remove from the heat.

Place the dulce while still hot in a wide dish to cool at room temperature. Then store it in the refrigerator until ready to serve. Its flavor improves over time.
