First, cook the cassava in a pressure cooker with water, salt, cinnamon, and star anise until tender. Drain it well and let it cool slightly before turning it into a purée. Remove the central fiber of the cassava to achieve a smooth texture.
Mix the purée with the beaten egg, ground anise, and sugar, then gradually add the flour until you obtain a dough that doesn’t stick to your hands. Wrap the dough in plastic wrap and refrigerate it for one hour.
Meanwhile, prepare the syrup by combining water, sugar, cinnamon, star anise, and citrus zest. Cook over medium heat for a few minutes, add the lemon juice, and set aside.
Once the dough is cold, form cylinders and cut them into equal portions. Shape them into figure eights, moistening your fingers to join the ends properly. Fry the fritters in hot oil until evenly golden. Let them rest on paper towels and drizzle with syrup right before serving.
