- 1 pound of salted codfish (1 ½ cups shredded)
- ½ cup of finely chopped parsley
- ½ cup of finely chopped onion

- ½ green bell pepper
- ¾ cup of wheat flour
- ¾ cup of cornstarch
- ½ teaspoon of baking powder
- ½ teaspoon of ground coriander with annatto (optional, for color)
- 1 egg
- Water (preferably from the second soak of the codfish)
- Vegetable oil for frying
👨🍳 Step-by-step preparation
1. Desalt the codfish
Place the codfish in plenty of water the night before, changing the water twice. Save the second batch of water to use in the batter.
2. Make the batter
In a blender, combine the flour, cornstarch, baking powder, egg, and 8 oz of the reserved cod water. Blend well until you get a fluid batter. Transfer to a bowl and stir in the shredded cod, onion, parsley, and bell peppers. Mix thoroughly, cover the bowl with aluminum foil, and refrigerate for at least 4 hours to let the flavors develop.
3. Fry carefully
After resting, bring the mixture to room temperature. Heat plenty of oil in a wide, heavy skillet over medium-high heat. Once hot, reduce heat slightly and spoon small portions of the batter into the oil. Do not overcrowd the pan. Fry until golden and fully cooked inside, flipping each one to ensure even frying.
4. Drain and serve
Once ready, remove the fritters from the oil, drain well, and place them on a flat dish lined with paper towels to remove excess oil. Serve hot and enjoy.
