Cuban Pumpkin Fritters: A Homemade Sweet from the Cuban Culinary Tradition
Cuban pumpkin fritters transform an ingredient commonly found in Cuban cooking into a homemade sweet with a tender texture and comforting flavor. Check the consistency of the batter. It should be thick and firm enough to scoop into small portions with a spoon. If it is still too runny, gradually add a little more flour until you reach the proper consistency.
Cover the bowl with plastic wrap and refrigerate the batter for 30 minutes. After that time, remove it from the refrigerator, uncover it, and allow the mixture to sit for a few minutes until it loses its deep chill and comes closer to room temperature.
Pour enough vegetable oil into a large, deep skillet and heat it over medium-high heat. Once the oil is hot enough for frying, use two spoons to scoop small portions of batter and carefully drop them into the oil, leaving some space between each fritter.
Fry the fritters in batches, turning them so they brown evenly on both sides. Once they have developed a beautiful golden color, remove them with a slotted spoon or metal strainer and allow the excess oil to drain.
Transfer the fritters to a serving dish lined with paper towels. While they are still warm, finish them with a light sprinkling of fine granulated sugar.
