Cuban Pan de Gloria is an irresistible sweet treat made with a tender, aromatic dough that is shaped into small rolls, baked until beautifully golden, and finished with a light coating of syrup and fine sugar. In this recipe, I'll show you how to make it at home, from activating the yeast to achieving that shiny, sugary finish that makes it so special.


🧂 Ingredients for Cuban Pan de Gloria

For the rolls:

  • 2 ½ cups all-purpose flour
  • ½ cup evaporated milk
  • 1 cup warm water
  • 7 grams active dry yeast
  • 1 tablespoon brown sugar
  • 1 egg
  • ½ cup extra virgin olive oil
  • ¼ cup white sugar
  • 1 teaspoon ground cinnamon
  • 1 teaspoon vanilla extract
  • 1 teaspoon salt
  • Butter, previously melted

For the glaze and finishing:

  • ½ cup white sugar
  • ½ cup water
  • Fine sugar for sprinkling

1. Activate the yeast

Pour the cup of warm water into a bowl and add the tablespoon of brown sugar. Stir with a spoon until completely dissolved. Add the 7 grams of yeast and mix again. Let it rest for 10 minutes. When bubbles or a light foam begin to appear on the surface, we'll know that the yeast is active.

2. Combine the dough ingredients

While the yeast is resting, sift the flour into a large, deep bowl together with the ¼ cup of white sugar, salt, and ground cinnamon. Once these ingredients have been sifted, add the whole egg, olive oil, vanilla extract, and evaporated milk. Mix until everything begins to come together.

3. Knead and let the dough rise

When the yeast is active, pour it into the previous mixture and begin kneading gently. Continue working the mixture until the dough no longer sticks to the bottom of the bowl.

Remove it from the bowl momentarily, coat the inside of the bowl with a little oil, and place the dough back inside. Lightly coat the surface of the dough with oil as well. Cover the bowl first with a thin piece of plastic and then with a cloth, keeping it protected from the light. Let it rest for approximately 1 ½ hours.

4. Release the air from the dough

Once the resting time is over, the dough will be ready for the next step. Gently press it down to release the air accumulated during fermentation.

5. Divide the dough

Knead the dough lightly and divide it into small portions of similar size. With these quantities, you can make approximately 10 pieces.

6. Shape each roll

Take one portion and stretch it into a long, thin rope. Begin rolling it from one end until it forms a shape resembling a small snail.

To prevent the final end from coming loose during baking, lightly moisten a finger with water and press the end against the rest of the dough until it is firmly attached. Repeat the process with all the portions and arrange them on a previously greased baking sheet.

7. Finish them before baking

Using a small pastry brush, carefully coat the surface of each piece with melted butter. This step will help the rolls develop an attractive deep golden color while baking.


🔥 Baking

Preheat the oven to 350 °F (approximately 175 °C). Once it reaches the indicated temperature, place the baking sheet in the oven and bake the rolls for 25 to 30 minutes, avoiding opening the oven while they are baking.

When they are done, remove the baking sheet from the oven and transfer the rolls to another surface or tray so they can begin to cool.

8. Prepare the syrup

Place ½ cup of white sugar and ½ cup of water in a saucepan. Set it over medium-high heat and allow the mixture to cook, without stirring excessively, until the sugar has completely dissolved and a slightly thick syrup has formed.

9. Glaze and sprinkle

Using a small pastry brush, generously spread the syrup over the entire surface of the rolls. To finish, sprinkle a layer of fine sugar over the top.
