Grapefruit Peels in Syrup: Traditional Cuban Dessert

- 3 large grapefruits
- 6 cups of sugar

Start by peeling the grapefruits. Then cut them into long sections and completely remove the inner pulp, keeping only the white part, which will be the base of the dessert.
Place the peels in a container with plenty of water and let them soak for at least 12 hours. During this time, change the water several times and gently squeeze each piece to reduce the fruit’s natural bitterness.
After soaking, transfer the peels to a pot with clean water, enough to cover them. Cook over medium-high heat until it begins to boil, then reduce the heat and let them boil for 15 minutes. Discard the water and repeat this process once more.
Once well drained, prepare the syrup by placing 4 cups of water, sugar, cinnamon, and lemon peel into a pot. Add the lemon juice and cook for a few minutes until everything is well combined.
Add the well-squeezed peels and a pinch of salt. Cook over low heat, without stirring, for approximately 2 hours and 15 minutes until the syrup thickens and reaches a dense consistency.

To check the proper consistency, take a small amount of syrup, let it cool, and touch it. It should feel sticky. At that point, the dessert is ready.
Remove from heat, allow it to cool to room temperature, then transfer to a suitable container and refrigerate. This dessert is best served chilled.
