Morón Cookies: Small Jewels of Cuban Pastry

- ½ pound pastry shortening
- 1 cup white sugar
- 4 cups wheat flour (measured after sifting)
- Zest of 1 green lemon (lime)
- 1 teaspoon vanilla extract
- ½ teaspoon salt
- Very fine powdered sugar for dusting

Begin by sifting the flour together with the lemon zest and salt into a large bowl. This step helps blend the aromas and produces a more uniform dough.
In another bowl, place the shortening, sugar, and vanilla. Mix with a wooden spoon until a creamy consistency is obtained. Gradually add the sifted flour and continue working the dough until it becomes smooth and no longer sticks to your fingers.
Place the dough on a lightly floured surface and press it gently with your hands to compact it. Cover with wax paper and roll it out softly with a rolling pin until it reaches a thickness of about half a centimeter.
Remove the paper and cut the cookies using a small round cutter, taking care not to deform them so they can be handled easily.
Line a baking tray with wax paper and sprinkle lightly with flour. Arrange the cookies on the tray, leaving a small space between each one and handling them carefully to prevent breaking.
Preheat the oven to 350°F (175°C). Place the tray on the middle rack and bake without opening the oven for about 15 minutes, until the edges begin to turn lightly golden. They should not brown completely.
Remove from the oven and allow them to cool completely on the same tray. Dust with powdered sugar to give them their characteristic finish.
